Well I have got the "fever", the royal wedding fever that is. How can you not with all of the hoopla surrounding this event. Anyway, the festivities start on the west coast at 1:00 a.m. (I will be in my warm bed) but the DVR is set and my daughter and I have plans to watch the whole thing after she gets home from school. We will be celebrating English style with cheese scones and tea. I think this will make it even more fun to watch. I got the scone recipe from the Nate Berkus show, you can see a picture of them on his website here. They sound scrumptious (I hope so). Here is the recipe. Try them out and tell me what you think? Are you going to watch the wedding???
Cheese Scones
yield 12-14 scones
Ingredients:
12 oz. self rising flour
1 1/4 tsp. baking powder
1 1/4 tsp. mustard powder
dash of salt
4 oz. cheddar cheese grated
1 egg
1/2 pint milk
Instructions:
preheat oven 425 f.
In a medium bowl, sift flour, baking powder, mustard powder and salt. Stir in cheddar cheese.
In a small bowl, lightly beat the egg and milk. Mix with the flour mixture and lightly knead for approx. 1 minute until soft.
On a floured board, pat out the scone mixture into a thickness of 1". Stamp out 2 inch rounds or triangles and place on a baking sheet.
Bake 15 minutes or until lightly golden. Don't open the oven while baking.
Serve with butter, jams or devonshire cream.

I can't wait to watch it! I absolutely have to use the recipe! They will definately put me in the right mood for the wedding!
